INGREDIENTES

  • 10 gemas de ovo
  • 2 ovos
  • 400 g de açúcar
  • 1 limão
  • 125 g de amêndoa sem casca moída
  • 50 g de manteiga sem sal
  • 2 chávenas de chá de água

PREPARAÇÃO

  • Aqueça 1 chávena de chá de água e 200 g de açúcar.
  • Deixe ferver durante 3 minutos.
  • Retire do lume e misture a amêndoa, a raspa de limão e a manteiga até obter um preparado uniforme. Deixe arrefecer.
  • Faça o caramelo no tacho com 1 chávena de chá de água e 200 g de açúcar. Aqueça e deixe ferver até formar o caramelo.
  • Distribua o caramelo numa forma de pudim de modo a que fique bem “regada”.
  • Junte as gemas com os ovos e misture convenientemente.
  • Adicione os ovos à calda de amêndoa e misture bem.
  • Coloque o preparado na forma.
  • Pré-aqueça o forno nos 180 ºC.
  • Confecione em banho-maria durante 60 a 80 minutos.
  • Retire e desenforme.
  • Sirva.

DICAS

  • Deve sempre mexer muito bem até homogeneizar os ingredientes.
  • Para fazer o caramelo deverá aquecer e ferver durante 15 a 20 minutos.
  • Pode utilizar caramelo já pronto, embora, em nossa opinião, seja preferível fazê-lo juntando a água e o açúcar.
  • Pode diminuir ou aumentar um pouco a quantidade de açúcar.
  • Decore com amêndoa laminada.
