INGREDIENTES

  • 1,2 kg de conquilhas
  • 0,5 kg de farinha de milho
  • 250 g de toucinho
  • qb azeite
  • qb sal
  • qb pimenta

PREPARAÇÃO

  • Comece por colocar as conquilhas em água e sal para as limpar de areia.
  • Passe-as novamente por água e coe.
  • Aqueça 2,5 l de água temperada com sal.
  • Vá acrescentado a farinha de milho e mexendo.
  • À parte frite o toucinho cortado aos bocadinhos.
  • Acrescente o toucinho ao milho e retifique de sal e pimenta.
  • Quando o milho estiver a ferver junte as conquilhas.
  • Deixe apurar mais um pouco e sirva

DICAS

  • Idealmente deixe as conquilhas em água de um dia para o outro em ambiente refrigerado.
  • É fundamental que mexa a farinha de milho continuamente.
  • Ao invés de toucinho pode usar bacon ou mesmo chouriço.
  • As conquilhas deverão abrir dentro do milho.
  • A bebida a acompanhar este xerém poderá ser uma bela sangria de espumante.
